Chive Dip Recipe

  • I used 1:1 sour cream to mayonnaise ratio. To make this dip slightly lighter you can use more sour cream than mayonnaise. Sour cream can be substituted with Greek yogurt.

  • You can add more/less garlic, if you like. You can also omit it completely.

  • Add as much chives as you like.

Chives: this is a common herb used in cooking, it can be classed as a finer cousin of leek, scallions/spring onions but subtle. For this chive dip recipe, you must ensure that the chive is chopped. I have used about 2 tablespoons for this recipe, you can use more if you want.

Yes, smashed potatoes or at least a portion of the recipe can be made ahead saving you some time. You can boil the baby potatoes a day or two in advance and once they are cool store them in and airtight container or bag until you are ready to bake them off. Remove them from the refrigerator while you preheat the oven so they come to room temperature or you may have to bake them a few minutes longer as they will be going in the oven cold otherwise.

I thought of making this dip because I had an abundance of chives in my herb garden (and it's only May!), and I had a neighbor stopping by at the last minute. This dip really showed off the chives and all their sweet mild onionyness!
